Culinary Classes are coming up starring your host, Chef Spencer Vail.  Spencer is looking forward to sharing his expertise and extensive knowledge so you can learn how to Cook Like a Chef in your own home.

The class is scheduled for bi-weekly sessions on Saturdays in January & February from 9:30 to 11:30 am.

January 16 – Week 1, Local Ingredients, International Flavour: In this fun, hands-on class, Chef Spencer Vail shares his secret recipe for perfect pasta every time as he demonstrates how to make stuffed noodles such as curried butternut squash agnolotti with sage and browned butter; braised chicken ravioli with smoked garlic, kale and forest mushrooms; and three cheese tortellini in creamy cherry tomato marinara.

January 30 – Week 2, That’s How I Roll!: Plan the perfect cocktail party with Chef Spencer Vail’s bundle of ideas to impress friends and family at your next soiree. Learn how to make your own signature shrub cocktail and these four foolproof roll-up hors d’oeuvres: two bite salmon wellington; homemade chorizo & cheddar sausage rolls; vietnamese cold rolls with peanut satay sauce; and thai chicken lettuce wraps.

February 13 – Week 3, Get in the Game: Sideline that mediocre meal with this exciting lesson on cooking accessible game meats like duck and lamb. Let Chef Spencer Vail be your hands-on kitchen coach to make sure every meal is a home run with ideas for beverage pairings and pro tips on preparing perfect dishes like pan seared duck breast with five spiced sweet potato and pickled montmorency cherry and lamb kofta brochettes.

February 27 – Week 4, Crustaceans — Cracking the Secrets to Delicious Shellfish: Get your shell game on as Chef Spencer Vail shows you how to flex your own culinary mussels with these sophisticated and crowd pleasing dishes: succulent poached shrimp with home made cocktail sauce; panko crusted crab cakes with sriracha aioli; and seared sea scallops with lardon, braised organic mustard greens & local maple beurre blanc.

February 6 ~ For MEN Only, Valentine’s Crash Course: Beyond Making Toast and Boiling Water 101 — learn how to not suck at cooking: With Valentine’s day just around the corner, what could be more romantic than showing that special someone how much you care by preparing a light and delicious meal to start the evening off on the right foot? Even the culinary challenged can take heart as Chef Spencer Vail has just the recipe to make a Kitchen Zero into a Kitchen Hero in just one short class. Start off with a simple salad of local organic greens, and dazzle your darling with a bacon wrapped chicken breast, garlic cream cheese mashed potato, and maple glazed carrots then seal the deal with the easiest no-bake cheesecake to serve with your favourite fruit topping. Class includes Craft Beer.
